INGREDIENTS

  • 2 salmon fillets, about 6 ounces each

  • 3 tablespoons olive oil
  • 3 garlic cloves, minced
  • 1 lemon, half for juice and half sliced
  • 1 teaspoon dried oregano or Italian seasoning
  • Salt and black pepper to taste
  • Fresh parsley for finishing, optional

DIRECTIONS

  1. Preheat the oven.
    Preheat your oven to 400°F. Line a baking sheet with foil or parchment paper for easy cleanup.
  2. Arrange the green beans.
    Spread the green beans across one side of the pan. Drizzle with 1 tablespoon of olive oil and add a pinch of salt. Toss to coat.
  3. Place the salmon.
    Set the salmon fillets on the other side of the pan, skin side down if applicable. Drizzle with the remaining 2 tablespoons of olive oil. Squeeze half the lemon over both fillets. Spoon the minced garlic evenly over the top.
  4. Season and add the lemon slices.
    Sprinkle the oregano, salt and black pepper over everything. Place a few lemon slices on top of the salmon for extra flavor.
  5. Bake for 12–15 minutes.
    The salmon is done when it flakes easily with a fork and the green beans are just tender. For thicker fillets, add another 2–3 minutes.
  6. Serve and finish.
    Plate the salmon alongside the green beans. Add fresh parsley if desired, and serve immediately.
